Double Shoulders

Cut from the area extending from the neck to the shoulders. Because it spans both the left and right shoulders, it is called "double shoulders".
This region supports the movement of the cow's head; the fibers are compact and firm, and the surface often bears natural neck growth markings.

Belly

Taken from the cow's abdominal area, commonly known as the "belly" region.
Because the abdominal skin must frequently expand and contract with feeding and breathing, it is relatively soft and exhibits pronounced extensibility.
